In October 2024, the Comiskey Group made a major operational leap by bringing the butchering and portioning of meat in-house. This strategic move led to the creation of Comiskey Butcher—a purpose-built facility located within Eatons Hill Hotel, now serving as the central hub for meat processing and quality control across all Comiskey Group hotels and restaurants.
“Bringing the butchery in-house has been a game-changer for us,” says Director Rob Comiskey. “It’s given us complete control over the quality, consistency, and supply of our meat across all venues. We’re now able to deliver a better product to our customers while streamlining operations behind the scenes—it’s a win on every level.”

The investment in the butchery was significant, with the facility equipped with state-of-the-art tools and technology to ensure top-tier production standards. From precision knives and saws to commercial-grade slicers, grinders, mincers, large-scale cold rooms, cryovac machines, and dedicated sanitation systems, the butchery has been designed to uphold the highest standards of hygiene, consistency, and efficiency.



The only external supplier involved in the process is Nolan Meats, based in Gympie, who provide the Comiskey Butcher with meat primals in bulk. Nolan Meats oversees the early stages of the supply chain, including livestock handling and abattoir operations, ensuring ethical sourcing and consistent quality.
Once the meat arrives at the in-house butchery, the Comiskey team takes full control. Their skilled butchers prepare everything required by the group’s kitchens—rib fillets, rumps, eye fillets, tomahawks, sirloins, porterhouse, and T-bones. Off-cuts are repurposed for burgers and stir-frys to ensure minimal waste. Impressively, the group currently produces between 2,000 to 2,500 in-house burger patties each week.


Beyond processing, the Comiskey Group also took control of its own distribution. Alongside the launch of Comiskey Butcher, the group introduced a fully branded refrigerated delivery truck. Adorned with venue logos, the truck not only transports meat to each hotel but also serves as a mobile branding tool, visually linking all venues under the Comiskey umbrella. This in-house distribution system allows the group to control delivery times and ensure product freshness. It also enables the team to plan for venue-specific events—like Melbourne Cup luncheons—by adjusting supply based on forecasted demand.

By founding Comiskey Butcher, the Comiskey Group has effectively brought a critical component of their food operation in-house, ensuring quality, consistency, and control across every plate served at their venues.
